Holy Guacamole! This oatmeal cookie recipe is incredible. After you see how easy these are, you’ll never want to bake a different cookie again.

Ok maybe a little exaggerated but seriously! They are amazing.

These cookies will forever remind me of quarantine. We must have made at least 2 batches each week. Its so nice to have these around when you start craving something sweet.

And they stay incredibly moist and soft for days, making them taste like a freshly baked cookie every time.

The Best Oatmeal Cookie Recipe

Special Equipment

  • Cookie Sheet – This cookie sheet is the best for keeping the cookies from burning. Coupled with the Silpat it’s almost guaranteed not to burn on the bottom.
  • Silpat
  • Ice Cream Scoop
  • Measuring Cups
  • Measuring Spoons
  • Heavy-duty standing Mixer

Ingredients for Oatmeal Cookie Recipe

  • 2 cups oatmeal instant
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 tsp vanilla homemade if you have it
  • 1 tsp baking soda
  • 2 cups flour
  • ½ tsp cinnamon
  • 1 tsp salt
  • 2 eggs
  • 1 cup oil I use avocado 
  • 6-12 ounces chocolate chips
  • 1 cup chopped nuts

Instructions

  • Whisk together the dry ingredients; flour, salt, baking soda, and cinnamon. Set aside
  • Mix both sugars and the oil until well combined.
  • Add eggs and vanilla and mix until combined
  • Add flour to the sugar mixture and mix slowly.
  • Add oatmeal and mix until combined.
  • Fold in chocolate chips and nuts until well combined.
  • Bake at 350° for 12-15 minutes depending on the size of your cookies.

Notes

  • Use an ice cream scoop to ensure consistently sized cookies.
  • Make sure that cookies are consistent size to ensure even baking
  • .You are going to want to use a heavy-duty standing mixer to make this as the dough gets extremely thick.  It becomes nearly impossible to stir by hand.
  • Make sure not to overcook the cookies.  They will stay soft and moist as long as you don’t overcook them.

I just love cookies that stay soft after you make them. And these fit the bill perfectly.
