- 2 cups oatmeal instant
- 1 cup sugar
- 1 cup brown sugar
- 2 tsp vanilla homemade if you have it
- 1 tsp baking soda
- 2 cups flour
- ½ tsp cinnamon
- 1 tsp salt
- 2 eggs
- 1 cup oil I use avocado
- 6-12 ounces chocolate chips
- 1 cup chopped nuts
Whisk together the dry ingredients; flour, salt, baking soda, and cinnamon. Set aside
Mix together both sugars and the oil until well combined.
Add eggs and vanilla and mix until combined
Add flour to sugar mixture and mix slowly.
Add oatmeal and mix until combined.
Fold in chocolate chips and nuts until well combined.
Bake at 350° for 12-15 minutes depending on the size of your cookies.
Use an ice cream scoop to ensure consistently sized cookies.
Make sure that cookies are consistent size to ensure even baking.
You are going to want to use a heavy-duty standing mixer to make this as the dough gets extremely thick. It becomes nearly impossible to stir by hand.
Make sure not to overcook the cookies. They will stay soft and moist as long as you don't overcook them.
