Ingredients for Oatmeal Cookie Recipe
- 2 cups oatmeal instant
- 1 cup sugar
- 1 cup brown sugar
- 2 tsp vanilla homemade if you have it
- 1 tsp baking soda
- 2 cups flour
- ½ tsp cinnamon
- 1 tsp salt
- 2 eggs
- 1 cup oil I use avocado
- 6-12 ounces chocolate chips
- 1 cup chopped nuts
Instructions
- Whisk together the dry ingredients; flour, salt, baking soda, and cinnamon. Set aside
- Mix both sugars and the oil until well combined.
- Add eggs and vanilla and mix until combined
- Add flour to the sugar mixture and mix slowly.
- Add oatmeal and mix until combined.
- Fold in chocolate chips and nuts until well combined.
- Bake at 350° for 12-15 minutes depending on the size of your cookies.
Notes
- Use an ice cream scoop to ensure consistently sized cookies.
- Make sure that cookies are consistent size to ensure even baking
- .You are going to want to use a heavy-duty standing mixer to make this as the dough gets extremely thick. It becomes nearly impossible to stir by hand.
- Make sure not to overcook the cookies. They will stay soft and moist as long as you don’t overcook them.
