- 1 cup 1 cup of Irish whiskey This is a starting point. Taste the finished product and adjust according to your taste. We typically add more. (I used Jamison Irish Whiskey)
- 1 can (14 ounces) of sweetened condensed milk
- 2 cups cream or half and half
- 1 tsp instant coffee granules
- 1 tsp vanilla extract
- ½ tsp almond extract optional
- 1 tbs chocolate syrup optional
Blend the base: In a blender, combine the Irish whiskey, sweetened condensed milk, heavy cream, instant coffee granules, vanilla extract, and almond extract (if using). Blend until all the ingredients are well combined and the mixture is smooth. Be careful not to overblend or it will turn into butter.
Taste and adjust: Give the mixture a taste and adjust the ingredients to your liking. If you prefer a stronger coffee flavor, add more coffee granules. Adjust the sweetness or the whiskey level according to your taste. This step is key to making the Irish Cream that you will love.
Bottle it up: Once you’re satisfied with the flavor, carefully pour the mixture into a clean, airtight bottle or jar. This homemade Bailey’s Irish Cream can be stored in the refrigerator for up to two weeks. But at our house it never lasts that long.
Chill and serve: Allow the homemade Bailey’s to chill in the refrigerator for at least a few hours (optimally 24 hours) before serving. Serve it over ice, in your coffee, or even get creative with cocktails.
