Rum Glazed Spiced Pecans

The vanilla rum glaze really adds a delicious depth of flavor.

Ingredients
  

  • 2 Cups Raw Pecan Halves

Warm Spice Mix

  • 2 tbs Sugar
  • ½ tsp Kosher Salt
  • ½ tsp Ground Cinnamon
  • tsp Ground Cloves
  • tsp Ground Allspice

Rum Glaze

  • 1 Tbs Dark Rum
  • 2 tsp Vanilla Preferably Homemade
  • 1 tsp Brown sugar - light or dark
  • 1 Tbs Unsalted Butter

Instructions
 

  • Line a cookie sheet with parchment paper
  • Stir together all ingredients for spice mix in a medium bowl and set aside.
  • Toast pecans on cookie sheet in 350° oven for 6-8 minutes.
  • Place hot cookie sheet on wire rack and let cool.
  • Meanwhile, in a heavy sauce pan, bring butter, rum, vanilla and brown sugar to a boil, stirring constantly, over medium heat.
  • Add pecans to rum mixture and stir with silicone spatula until the pecans absorb the rum mixture. about a minute
  • Transfer glazed pecans to the bowl with spice mixture. Stir until pecans are well coated.
  • Return warm spiced pecans to the parchment lined cookie sheet to cool.

Pro tip!  
Check the bulk section of your grocery store for the spices you don't already have.  This is an easy way to keep costs down.
You are going to want to make a double batch because these will disappear quickly.
