It can easily be made ahead and refrigerated or frozen for an easy Christmas morning breakfast.
But honestly, we love it any time. It’s really become one of our regular breakfasts.

The Best Bacon and Cheese Quiche Recipe
Equipment
Ingredients
- 1 lb bacon cooked crisp and cut into 1/2-inch pieces
- 5 large eggs
- 1 cup heavy cream
- ½ Onion finely chopped
- ¼ tsp kosher salt
- ½ tsp pepper
- 8 ounces Gruyere cheese
- 1 unbaked Pie Shell store-bought is fine
INSTRUCTIONS
Whisk together eggs and cream until smooth.
Add bacon, onion, salt, pepper, and cheese and stir until combined.
Pour into unbaked pie shell
Cook at 350 degrees for 30-40 minutes, or until egg is firm.
Cool on wire rack for 15 minutes before serving
You can serve warm or at room temperature.
We love serving ours with a side of homemade salsa.

Ingredients
- 1 lb bacon cooked crisp and cut into 1/2 inch pieces
- 5 large eggs
- 1 cup heavy cream
- ½ Onion finely chopped

- ½ tsp pepper
- 8 ounces Gruyere cheese
- 1 unbaked Pie Shell store-bought is fine
Instructions
- Preheat the oven to 350°
- whisk together the egg and cream until smooth. Stir in cheese, onions, salt, pepper and bacon.
- Pour the mixture into the prepared pie pan.
- Bake at 350° for 30-40 minutes – jus until the center is set and a toothpick comes out clean.
- Cool on a wire rack until the eggs firm a bit.
- Serve warm or at room temperature.
- Can be stored in the refrigerator for up to 4 days
Notes
Tips:
Don’t substitute any other cheese. Gruyere cheese is delicious, melts beautiful,ly and adds the perfect creamy texture to the quiche.
I leave my onions larger so that they are easy to pick out. Several people in my family do not like the texture of onions in food. You can also leave the onions out altogether and just use onion powder.
You can prepare the quiche ahead of time and keep it refrigerated or frozen until time to bake. This makes it the perfect for busy holiday breakfasts and brunches.
You can substitute ground breakfast sausage for the bacon if you prefer. We typically use the Owens hot sausage because we like the spice or you could also use the Owens Regular.
Once you get used to the base recipe, you can start experimenting with different combinations of meat, cheese, and vegetables.
This recipe fits perfectly in the Pilsbury 9″ deep dish frozen pie crust. Just be sure to precook the pie crust like the package directions instruct. Otherwise, the pie crust will be partially raw. Sadly, I learned this the hard way.
